Ginger and Tamarind Prawns Recipe

Feel like your prawns are a bit uninspiring these days? For the perfect blend of sweet and tang, try our flavoursome and unique take on a prawn stir-fry that will leave you wanting more.

INGREDIENTS:

300g raw tiger prawns

2 large garlic cloves, minced

2 tbsp ginger paste / fresh ginger, minced

Red chilli, to taste

2-3 tbsp tamarind paste

Lemon juice, to taste

Pinch of stevia

METHOD

Mix all the ingredients together, except the prawns, in a ziplock bag to make the marinade.

Add the raw prawns to the bag and marinate for 1 hour, or overnight.

In a non-stick pan, tip out the marinade alone, retaining the prawns, and cook until it reduces into a very thick caramel-like sauce – do not let it burn!

Add the prawns and cook until white.

Tip: Keep an eye on your prawns. Overcooking will turn them tough, and no one wants that!
